GIO GIO’S is a Mediterranean restaurant concept in the heart of Milan, built around generosity, sharing, warmth and refined hospitality. Our food is inspired by the sun, the sea and the Mediterranean way of life — vibrant, fresh, elegant and full of flavour.
We are looking for a strong, passionate and highly organised Sous Chef to support the Head Chef in leading the kitchen team and ensuring smooth daily operations.
This role is for someone who leads by example, stays calm under pressure, takes ownership and understands that great food, strong organisation and team culture are equally important.
Purpose of the Role
The Sous Chef will actively assist the Head Chef in supervising and facilitating the smooth operation of the kitchen department.
The role is responsible for supporting the planning, organisation, direction and control of kitchen production and administration, while ensuring that GIO GIO’S standards are consistently maintained.
The Sous Chef plays a key role in helping the kitchen department achieve the restaurant’s performance goals and in creating the full GIO GIO’S experience for our guests.
Key ResponsibilitiesKitchen Operations
- Support the Head Chef in the daily running of the kitchen.
- Supervise kitchen preparation and service to ensure consistency, quality and efficiency.
- Ensure all dishes are prepared and presented according to GIO GIO’S standards.
- Maintain high standards of cleanliness, hygiene, food safety and organisation at all times.
- Monitor mise en place, production levels and service readiness.
- Support the team during lunch and dinner service.
- Ensure that all kitchen sections work smoothly together.
- Take corrective action when standards are not met.
Team Leadership
- Lead by example and act as a role model for the kitchen team.
- Support, train and mentor chefs and junior team members.
- Help create a positive, respectful and professional working environment.
- Share the GIO GIO’S family spirit across the team.
- Encourage personal development and support team members in improving their skills.
- Treat colleagues and guests with the same respect and care as family and friends.

Communication
- Attend and contribute to daily management briefings.
- Lead or support daily kitchen team briefings.
- Ensure clear and efficient communication between kitchen, floor, bar and management.
- Communicate daily priorities, operational issues and service updates clearly and proactively.
- Provide daily and weekly reports to upper management when required.
- Work closely with the Head Chef, Restaurant Manager and Guest Relations team.
Administration & Standards
- Ensure SOPs, manuals and recipes are kept up to date.
- Maintain consistency in recipes, portioning, preparation and presentation.
- Ensure all legal, health, hygiene and safety requirements are followed and properly communicated to the team.
- Support the implementation of kitchen procedures and operational standards.
- Ensure all operations are conducted according to GIO GIO’S standards.
Financial & Stock Control
- Support the Head Chef in controlling food cost and kitchen expenses.
- Monitor stock levels and ensure correct ordering procedures.
- Assist with inventory control and stock management.
- Support purchasing and supplier communication.
- Help achieve the best possible product quality and pricing for the business.
- Reduce waste through proper planning, organisation and control.
- Ensure approval processes are respected for orders and expenses.
Guest Experience
- Understand that the kitchen plays a key role in creating the GIO GIO’S guest experience.
- Support the team in delivering food that reflects the concept, quality and identity of the restaurant.
- Work closely with Guest Relations and the front-of-house team when required.
- Help ensure that first-time guests become returning guests through quality, consistency and care.
- Stay honest, authentic and always be willing to go the extra mile.
What We Are Looking For
- Previous experience as Sous Chef, Senior Sous Chef or strong Junior Sous Chef in a high-quality restaurant.
- Strong background in Mediterranean cuisine is a plus.
- Excellent leadership and communication skills.
- Strong organisation and ability to work under pressure.
- Good understanding of food cost, stock control and kitchen administration.
- High standards of hygiene, quality and consistency.
- Positive attitude and hands-on mentality.
- Ability to train, motivate and support a team.
- Professional, reliable and solution-oriented mindset.
- Fluent English is required; Italian is a strong advantage.
